Can we as a community teach fundamentals?

Assists don't ignore fundamentals, nor do Ultras or any other game specific mechanic (unless it just removes all counterplay). An assist is just another resource to track.

-"applying heavy pressure gets me bopped by updo"
-"if his assist is recovering, I can apply pressure with more safety"
-"how can I convince this opponent to waste this valuable resource"

Thus the fundamental mindgames begin.
What we mean is, playing SG a lot is going to prepare you less to play ALL fighting games than playing some other games like KoF or VSav.

And I disagree with that.

If I want to learn how to block mixups, I'd play GG or Vsav or something like that.

If I wanted to learn the importance of neutral, I'd play Sf2 or Alpha 2.

If I wanted to learn how to read an opponent, I'd play Melty or 3rd Strike

If I wanted to learn Risk and Reward, I'd play Marvel 3 or SG or some versus game.

Sg won't show you everything, no game will show you everything, but you'd see alot.
