I'm going to guess that that is either the spellbook of the Twilight Sparkle replacement (who will be a goat), or the spellbook of the final boss, who will be a goat. Either way, I can't wait for that eventual Kickstarter.
I got to screw with FiM a little bit, it seemed pretty solid and fun. I'll tell myself that's the reason why I'll try this out, and not because I will literally play any fighting game.

It's one of those really good feelings in life where you go to a message board you haven't been to in a really long time and just HAPPEN to stumble upon an interesting nugget of info.
If anybody is still interested, the art guy for Tribute Edition released a graphical update that improves upon low-res stage backgrounds and Rainbow Dash's animations. The addition of animations to Fluttershy's stage was a particularly notable improvement.
so instead of ponies we have cows? but wait they horns too so that makes them bulls but they have eyelashes that make them look like girls... so... uh... will there be fighting shown soon so i can look at it and see if it's okay or not?
Yup. Some cattle are naturally hornless. This is called being “polled” and is a genetic trait in cattle that can be passed down to their offspring. It’s also common for cattle on farms to have their horns removed as very young babies, so they never grow, and to have the horns on adult cattle cut or blunted so they don’t hurt each other or the people working with them.
As for the idle animation: very smooth and Flash-like. Some blinks would be nice...

She's pretty. I think it's safe to assume that she'll be the stand-in for Rarity. So far, she's the one I want to main. Especially if she ends up playing anything like Rarity did.
So, to recap, what characters have been revealed/hinted at so far?
1) Cow (surely the Applejack of the game)
2) Reindeer (with her grace it has to be the Rarity)
3) Alpaca (which I'd assume is the Pinkie Pie, just look at that carefree party animal)
+) demon book with goat creature sketches
Twilight's stand-in because magical book?
Fluttershy's Double because controlling animals and beasts + bunny bookmark?
Steven the unplayable boss (plz no)?
